Ingredients
1 1/2 cup canned coconut milk (our favorite is Thai Kitchen)
1/2 cup additional coconut milk or plant based milk
1 scoop XO Jacqui Vanilla Greens Protein Powder
1/3 cup pure maple syrup (or sweetener of your choice)
1/8 tsp salt
1 tsp pure vanilla extract
Directions
Stir all ingredients together in a bowl. Freeze the mixture in ice cube trays or a few small bowls, then blend the frozen mixture in a high-speed blender until creamy. Enjoy the ice cream straight from the blender, or freeze for a few hours for a firmer texture.
