Blueberry Muffins


Yields 12 muffins

Ingredients

2 cups all purpose flour
½ cup XO Jacqui Berry Pomegranate Protein Powder (other flavors also work beautifully)
2 1/2 tsp baking powder
1/4 tsp sea salt
3/4 cup organic pure cane or coconut sugar
1 3/4 cups unsweetened plant milk
1/3 cup olive oil or avocado oil
1 tsp vanilla extract
1 1/2 – 2 cups blueberries, fresh or frozen
1-2 tbsp lemon zest (optional)

Directions

Preheat the oven to 350 degrees. Line a muffin pan with paper liners. Mix wet ingredients together in a bowl. Mix dry ingredients together in a separate bowl. Combine wet & dry ingredients and then fold in the blueberries & lemon zest if using. Fill each muffin liner with ¼ cup of batter. Bake for 30 minutes. Let cool for a few minutes and enjoy warm or at room temperature.
